Tomato Soup with Crispy Baguette

Hi guys, what's up?! We're having winter break now, so we can relax a little and blog more ;) Last weeks were really tough, because of exams. We didn't care this much about healthy food, especially me (Karo). Remember - pizza is your best friend while studying! Yeah, but then after days with junk food and sleepless nights, our immune systems are weak and it can cause a flu ;( We need to get back on track with fit and healthy diet!


So we're starting today with a delicious tomato soup - full with vitamins and antioxidants - very valuable for your body. This soup recipe is really easy and quick and I bet you have all ingredients in your fridge, so you can make it anytime. 
The soup is very creamy, but not fat. Instead of heavy cream this time we added philadelphia cheese, so it makes the soup light and smooth. We love herbs, so there's a lot of basil and oregano in the recipe - it's really aromatic! We also made crispy baguettes to serve with soup, but sunflower seeds to put on top will be good as well.

Ingredients

  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • 450 ml vegetable broth
  • 500 g tomato passata
  • 2 tbsp tomato conentrate
  • 2 tsp sugar
  • 3 tbsp basil
  • 1 tbsp oregano
  • 150-250 g philadelphia cheese, room temperature
For the crispy baguettes:
  • 1 baguette or roll, sliced
  • 2 tbps butter
Instructions
  1. On a small pan melt the butter, add onion and after 3 minutes add minced garlic. Fry until it light gold. Transfer to a food processor and blend until smooth.
  2. In a medium pot heat the vegetable broth. Add tomato passata and concentrate. Bring to boil. Add sugar and herbs, stir and boil about 15 minutes.
  3. Now prepare the baguettes. On a small pan melt the butter, add sliced baguettes. Heat about 1 minute on each side or until gold and crispy.
  4. After 15 minutes get the soup off of the heat. Mix in the philadephia cheese, it will take a few minutes to stir the cheese in.
