Fresh nutritious salad

Hi everyone! Today we wanted to share with you a healthy recipe using fresh veggies and fruit, but also containing filling grains and complementing sweet sour sauce. You can make this salad for dinner, take it to school/work or as a post workout meal. 

It's really good for you, contains a lot of greens, veggies and fruit. We also made our plain usual dressing, that actually you can use with any kind of meal. Apple and cucumber give refreshing taste and crunch, the good fats are in the avocado and grains. We are using bulgur because it's easy to make just as quinoa, but a little bit less expensive and at the same time it's important to eat healthy and not spend so much money on that! What's amazing about this kind of wheat it has a high amount of fiber and protein and most vitamins and minerals. So it's just a bowl of health - vitamins, protein and fiber! :D

  • 200 g bulgur
  • 150 g arugula salad
  • 1 apple
  • 2 avocados
  • 1/2 fresh cucumber
  • juice of one lemon
  • 3 tbsp olive oil
  • 1 tbsp honey
  • 1 1/2 tsp mustard
  • 20 g cranberries
  • 10 g flaked almonds, toasted
  • sea salt, to taste
  • optional: crispy bacon

    1. Cook the bulgur for 15 minutes, under cover. In this time you will manage to prepare the rest of your ingredients.
    2. Wash all of the veggies; then cut the apple into small slices. Avocado cut in half, take out the stone and slice. Also chop the cucumber into quarters. 
    3. To make the light sauce just mix olibe oil with honey and mustard.
    4. Arrange your plate with all of the ingredients, drizzle with the sauce and top with cranberries and toasted almond flakes.
