Strawberry and Mascarpone Cream Tart
Monday, July 31, 2017Oh wow! I love summer so much! It's warm outside, and I'm a cold weather type of person. And I love summer desserts - with fresh fruits from local farmers, those are the best. I'm waiting whole year for summer and our regional strawberries! Mmm.... There's nothing better than them! Nothing can replace them even those winter imported strawberries aren't so good :(
And the really really best dessert is this simple Strawberry Tart! It has all what we love and I'm sure you'll love it too! Our friends and family get a little addicted to this tart. Once you start eating it, you want another piece and more and more. And the tart is light, the cream is fluffy so you don't feel this calories. Little tricky... but you can sin sometimes, right? Well, THIS Tart is worth it!
The crust is almost the same as in our previous recipe for the Strawberry & Vanilla Tart. Simple shortcake with lemon zest, which gives the cake more freshness. The shortcake is easy to make and it's crispy even the next day, so you can prepare it the day before a party.
And the cream! Uhh!!! I could it eat with strawberries without the crust, haha! It's sooo good, fluffy and sweet. It's based on mascarpone and whipped cream. I love it so much that I taste it hundred times while cooking and then I'm full before even cuting the first piece!
This time we decorated the cake with little meringues. You can try it too! They're really sweet, crispy outside and ciagnace inside. It's an opportunity to make them, because we use only egg yolks in this recipe. Don't waste food and make some meringues! Other option is to make a big meringue with more mascarpone cream and more strawberries! Oh, we love it!

Recipe type: dessert
Shortcake crust
• 175 g
butter
• 3 egg
yolks
• 1 tsp
honey
• 60 g icing
sugar
• salt, pinch
• zest from ½
lemon
• 250 g
flour

1. Preheat
the oven to 180°C (350 F). Spread some butter in the tart pan.
2. In a medium bowl mix all of the ingredients, except flour.
3. Next add flour and mix.
4. Place the dough in the pan and even out with fingers.
Make pinholes with fork in the bottom.
5. Bake for 18 minutes, take out and leave to cool.

Mascarpone cream
• 250 g
mascarpone
• 250 ml
heavy cream
• 5 Tbsp
sugar

6. In
a medium bowl whip heavy cream with sugar.
7. Add
mascarpone and mix.
8. Place in the refrigerator while the crust is baking.

• 2 ½ - 3 cups
strawberries, diced
|
9. Put
the mascarpone cream on the crust.
10. Place
strawberries on top.

What. A. JOYFUL. Dessert!!!! I love the visual and all of the flavors. The cream is just to die for, visually and flavor-wise (the latter I imagine since I haven't tasted it...yet.)
