Hello everyone! How are you? Today was the first very warm and sunny day here in Warsaw, so that sparked us to start celebrating Pancake Day a bit earlier. Though can you blame us?
Pancakes are one of the best meals. You can have them sweet or savoury, also you can make noodles from them!
Perfect for every part of the day: breakfast, lunch, dinner and supper. A lot of people like to eat fluffy American style pancakes, but we are the other half that enjoy crepes. They are thin, crispy and you don't have to be worried that they might be not done inside. Also you have the power to make the most mega toppings ever! :D

Servings: 12 crepes
Recipe type:
- 2 eggs
- 1 cup plain flour, sifted
- 1 cup whole milk
- a dash of sparkling water
- pich of salt
- toppings:
- nutella with sliced banana and almond flakes
- strawberry jam
- fresh lemon juice with sugar
- In a medium bowl whisk the eggs with a hand egg beater with some salt. Sift in the flour. And mix to combine.
- Add a cup of whole milk or more to get the right consistency. If you want your pancakes to be more fluffy you can add a dash of sparkling water. It's important to mix everything to incorporate the ingredients.
- You should leave a batter for at least 30 minutes or overnight, they are amazing to just pop on the pan in the morning.
- On a medium pancake pan spread a bit of olive oil with pastry brush and let it heat up.
- At once fry the batter about one ladle to get a medium sized crepes, around 2 - 3 minutes on one side or until it gets light golden.
- Add the toppings of your choice and fold in half or quarters.
