Valentine's Day Treats

Hi lovely bunch! Tomorrow's Valentine's Day - day when you celebrate love with your soulmates, although you should show each other affection every day. But if you're single you shouldn't be sad or scared to go out that day, remember that you'll find your love one day!

To make this day even better we are treating you with two recipes for amazing sweet, delicious pink mini meringues with whipped cream and vanilla cupcakes with strawberry milkshake frosting. Don't worry about calories, it's that kind of day when you can treat yourself with sweets.
In the recipe for meringues we wanted to make them not too overpowering sweet, that's why we used grated lime zest in the cream. It gives you a little bit of a fresh taste. If you're vegan you can definitely use water from canned chickpeas instead of egg whites. The cupcakes on the other hand may be too sweet for some of you, but don't worry we used half amount of the butter in the frosting and substitute it with philadelphia cheese. And the cupcakes have a surprise inside - strawberry jam! They taste delicious so be aware we warned you - you won't be able to stop eating them after just one.

Pink Mini Meringues with Lime Cream and Fresh Berries

Pink Mini Meringues
Ingredients
- 4 egg whites, room temperature
- 220 g sugar
- 1 tsp potato starch
- 1 tsp white wine vinegar
- red food colouring
Lime Mascarpone Cream
- 200 g mascarpone
- 180 g whipping cream
- zest of one lime
- 1 tbsp sugar
Garnish with fresh fruit ex. strawberries, cranberries and raspberries.
Instructions
- Preheat the oven to 120°C (250F).
- In a medium bowl beat the egg whites, just before they are done start adding one tablespoon of sugar at a time, while still mixing the egg mixture. You should get a white shiny, thick foam. Keep beating for another 2 - 3 minutes.
- At the same time add starch and vinegar and mix again for 1 minute. Last but not least add few drops of red food colouring to desired shade of pink; gently mix it in.
- On a baking sheet draw circles using a cup, fill them with the mixture using a spoon or piping bag with a star shaped nozzle.
- Bake for 25 minutes in 120°C (250F), then 45 minutes in 100°C (220F).
- In the meantime you can make the cream and keep it in the fridge until decorating the meringues.
- First start with beating the mascarpone in one bowl, then do the same in a second bowl with the whipping cream. Add them together with sugar and grated lime zest and mix on a slow speed until you get the desired form.
- When the meringues are cooled down decorate them with whipped cream and fruit of choice.
Vanilla Cupcake with Strawberry Jam Filling and Milkshake Frosting

Vanilla Cupcakes
- 225 g sugar
- 115 g butter, room temperature
- 2 eggs
- 2 tsp vanilla extract
- 1 1/3 cup and 1 tbsp flour
- 1 tsp baking powder
- 1/2 cup milk
- filling: strawberry jam
Strawberry Milkshake Frosting
- 120 g butter, room temperature
- 150 g philadelphia cheese
- 2 to 2 1/2 cup granulated sugar
- 1/3 cup strawberry milkshake powder
- small heart sprinkles
Instructions
- Preheat the oven to 170°C (325F).
- Mix the butter until light and fluffy, gradually add sugar and eggs one at a time, don't forget the extract. In another bowl add dry ingredients and add in three portions in turns with two portions of milk. Mix those ingredients in with a spatula.
- Line the cupcakes pan with the liners and fill each one with batter to 3/4 height.
- Bake for 20 minutes or until skewer comes out dry.
- To make the frosting with an electric mixer mix the butter until fluffy, add the philadelphia cheese and granulated sugar, depending on how sweet you want it to get. Add the milkshake powder and mix until combined.
- When the cupcakes are cooled cut out the tops and fill them with strawberry jam, then start frosting the cupcakes using a piping bag. Top it off with heart sprinkles.
