Creamy corn sauce with zoodles or penne
Sunday, October 08, 2017We also want to change our diet a bit and cook healthier and more responsible. As our holidays are coming to end we're going to have less time for cooking. And also some of our friends ask us for quick, healthy and students-friendly recipes. We're trying to put some on our blog soon. And this is the first one. You can find more 30 minutes recipes here.
The corn sauce is really easy to make. And it feels still like summer, because of CORN. When we were little we ate cooked corn with butter every year. What's more in this sauce is CHILLI, it gives THE taste. The sauce is spicy, but also has corn sweetness. And the color is beautiful!
My version was with zoodles. And it was 100% VEGAN and healthy. Also it has low calories, about 300 in my serving. I love zoodles, they're crispy and raw. The color is also nice and I love spaghetti and the way you eat it. Or maybe more like tagliatelle, they're even better. We have an electric spiralizer now, so making veggie noodles is even quicker and funnier. I could eat it every single day.
The second version was for our family, with penne pasta. It was also good. The sauce is creamy and it fits also with meat, like chicken. It would be very good. The sauce is also good when cold, so you can take it packed for school or work. If you have can heat it up it'll be even better. So let's go to the recipe and you'll have a nice lunch for tommorow.

Creamy corn sauce zoodles
• 2 cans
sweet corn (about 500 g)
• 1 chilli
pepper, diced
• 1 onion, diced
• 4 garlic
cloves, sliced
• 2 Tbsp oil
• ½ cup
veggie broth
• salt,
pepper
• zoodles or
pasta *
• shredded
mozzarella for topping

1. In a medium pan heat oil. Add onion and simmer.
2. Add garlic, be quick not to burn. Then add chilli pepper
and sweet corn.
3. Cook about 3-5 minutes and add veggie broth, salt and
pepper. Bring to boil.
4. Take off of the heat. Blend until smooth. Add some water if
the sauce is too thick.
5. Pour on zoodles or penne pasta. Top with mozzarella
cheese or some sunflower seeds.

* For one serving I used 2 zucchinis for zoodles.
