Ginger Spices Cookies

We got inspired by a lot of recipes especially - hot ginger tea with lemon slices, but also the warming winter spices. They're usually used in entrees, drinks and mostly in making best desserts!
Ginger cookies with white chocolate and sprinkled pistachio or lemon zest, or both. Why not, these are the best seasons ahead of us to allow yourself eat some sweets. The melted chocolate is the base for sprinkles! They're perfect on their own or with hot tea / hot chocolate. They literally scream to you - CHRISTMAS! It's a perfect addition to a Christmas present that you made for someone yourself. You could make these with your kids on cold winter evenings. And if you're younger go ahead, invite your friends and all of you can have fun in the kitchen!
The recipe makes around 40 cookies, depending on how big you'll make the balls. To make sure that they're baking evenly and getting light brown we baked one pan at a time. You should be able to fit about 15 cookies in one baking pan.

Ginger cookies
- 2 cups plain flour
- 2 tbsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp ground cloves
- 1/4 tsp cardamom
- 1/4 tsp salt
- 1 tsp baking soda
- 170 g butter, room temperature
- 2/3 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 1/2 tsp vanilla extract
Instructions
- In a small bowl combine dry ingredients.
- Using mixer, in a middle size bowl, beat the butter until fluffy. Slowly start adding both white and brown sugar. Keep mixing to combine ingredients, beat in the egg and vanilla extract.
- Combine the mixture with your dry ingredients and keep mixing.
- Prepare baking pan with the sheet and form small balls out of your dough. Then cover each one in the sugar. Place them in a distance from each other and flatten with your hand.
- Bake in 180°C. (356 F)
- Take out of the oven, let them cool for 15-20 minutes.
- Melt 2 bars of chocolate either in the microwave or in the bowl over boiling water. For the toppings grate zest of one clean lemon, using kitchen mortar grind pistachios into small pieces.
- To decorate your cookies cover half of each one with chocolate and sprinkle with toppings of your choice. Enjoy!
