Homemade Nachos with Guacamole

Hi guys! It's cold and rainy outside, so we can officially say it's good old autumn! Weather like this is not very optimistic and most of us don't want to do anything, especially going to the kitchen and sitting there making a meal for 2 hours. Although we don't mind that and sometimes that's what drives us out of the fall depression. Spending even 20-30 minutes while making snacks or baking cookies really can bring a smile on your face, also you feel a bit better that you have actually done something that day.
Today's recipe is something quick and easy, snack that everyone loves and you can make it yourself with what you have in the fridge! You can make your own tortillas, but we used bought one's. We all love guacamole so why not eat it all the time :p. It's great healthy snack for munching on during movie nights with friends! If you don't like guacamole you can use other dips or if you have a bit more time go ahead and make hummus. This recipe can easily be changed to your tastes.

- 3-4 wheat tortillas
- 1 tbsp olive oil
- 2 tsp sweet paprika
- 2 tsp garlic powder
- 1 tsp salt
Guacamole
- 2 medium avocados
- handful cherry tomatoes or 1 medium tomato, diced
- 1 red onion, diced
- 1/3 tsp salt
- juice of 1 lime
Instructions
- Preheat your oven to 180°C. Cut your tortillas into wedges or some other shapes if you like.
- Line the baking pan with sheet and spread the tortilla wedges. Cover with olive oil and spices. Bake for 5 minutes.
- Take out the pan and turn the wedges on the other side and repeat the covering with spices process. Put back in the oven for 3-4 minutes or until golden brown.
- When the tortillas are still in the oven it's time to prepare the guac! Cut the avocado open and take the stone out. Mash the avocado in the bowl, mix in with diced tomatoes and onion.
- To add some more flavour squeeze in lime juice, add salt and mix together to combine.
- Put still warm tortilla wedges in a medium size bowl and you're ready!
