Vegan Bolognese Zoodles
Sunday, April 09, 2017Hi guys! It's amazing sunny day today! We love spring for longer, sunny days, green blossoming trees and all of those beautiful flowers! But as well this is a hard time for our body, we had just changed the clock time and the weather is variable. It's called as springtime blues and for us - we have it every single year :/ So we try to beat it with cool activities and natural food full with vitamins.
Most people who have problems with springtime blues have issues like anxiety, troubles with falling asleep and than they're tired the whole days. Some have also problems with weight, we look for solution in sweets to make our mood better.
But our way to beat the springtime blues are activities outside when it's sunny and having healthy (not every single day) nutritious food. We try to use fresh veggies - not to lose their profits with boiling or frying.
So today we have for you this easy and tasty recipe for Bolognese Zoodles. We love zoodles (noodles made from fresh zucchini) - it's quick to make them and healthy - when you substitute wheat pasta with zucchini, you get more vitamins and less calories! And I can promise you, you won't be hungry soon :) Also zucchini noodles are crispy, so it gives you more enjoyment from eating.

Servings: 4
- 2 Tbsp oil
- 1 onion, diced
- 4 cloves garlic, minced
- 4 carrots, shredded
- 500 g tomato passata
- 100 g tomato puree
- 3 Tbsp basil
- 1/2 tsp chili powder
- 1 tsp sugar
- salt and pepper, to taste
- 1 1/3 cup water
- 1 cup red lentils
- 4 medium zucchini
Instructions
- Heat a large pot over a medium heat. Add oil, diced onion, minced garlic and saute for 3 minutes. Than add shredded carrots, lentils and spices - cook for next 3 minutes.
- Add tomato passata, puree, water and bring to boil. Boil for about 20 minutes or when lentils will be ready.
- While the sauce is boiling - prepare the zoodles with your spiralizer or vegetable peeler.
- Serve the raw zoodles topped with the sauce. You can have it warm or cold.
