Hi everyone! It's the end of the year, that's why we would like to share with you some of our thoughts. First of all thank you so much for all of you sticking with us, liking our posts. We're really thankful for almost 3k of you visiting our blog! It was a huge milestone for us this year and we hope that in this upcoming year we'll have much opportunities to share with you amazing recipes and other lifestyle posts.


We wish you a Happy New Year, filled with health, success and of course delicious food! Don't worry about what you eat, because you shouldn't be that restricted about it. Food is something you should enjoy, as long as it's balanced within proportions and with working out. It's all your choice.


Also down below we have a recipe for delicious cupcakes for New Year's party, that will take you no longer than 30 minutes (not including baking), but you can easily get your hands on the ingredients and you don't have to worry because everyone will love it. The chocolate-y creations filled with plum jam will just dissolve in your mouth and they're definitely the show-stealer!

Chocolate cupcakes with plum jam

Ingredients

  • 2/3 cup + 2 tbsp plain flour
  • 2 tsp cinnamon
  • 1 tsp gingerbread spice
  • 1/2 tsp dicarbonate soda
  • 3/4 tsp baking powder
  • 120 g butter
  • 55 g dark chocolate
  • 1/2 cup cacao, unsweetened
  • 2 eggs, room temperature
  • 3/4 cup brown sugar
  • 16 g vanilla sugar
  • 1/2 cup sour cream, room temperature
  • 1 cup plum jam
  • 100 g milk chocolate
  • 30 g butter


Instructions
  1. Preheat the oven to 170°C (340F). Line the baking form with cupcake liners.
  2. On the stove melt the butter, take off the heat. Mix with dark chocolate to melt, add the cacao powder and whisk to incorporate. Leave to cool.
  3. Mix the sieved flour, dicarbonate soda, baking powder and all of the spices. 
  4. In a middle bowl beat the eggs with sugar, add the chocolate mixture and mix together. At a time add and mix in 1/3 of sour cream, then add 1/3 of dry ingredients and combine. Repeat the process.
  5. Using ice cream scoop fill half of each cupcake liner with the mixture, then add 1 tsp of plum jam, cover with chocolate dough.
  6. Place into the oven, bake for 20-25 minutes. Check with the skewer if they're ready. Take out to cool down.
  7. Melt the butter with milk chocolate and cover each cupcake with 1 tsp of melted drizzle.
