Sweet Potato & Lentil Mini Burgers

Hi guys! It's time for another vegetarian recipe. This Sweet Potato & Lentil Burgers are perfect for healthy lunch and you can take them in your lunchbox to school or work. They taste really good warm, but cold for example in salad are still amazing.

What we love about them is they're crispy outside, but delicate and soft inside. What else, this burgers are baked in oven, so they're not fat and heavy. You may think that potatoes are bad for you, but that's a lie! They are filled with starch, that gives you a lot of energy and provides over 80% of the carbs in your diet. We also made avocado sauce, which fits really good with burgers and adds even more flavour to the dish. Someone can tell vegetarian lunch is not filling, but because of including lentils, you'll feel full and have a great source of protein.

This recipe is quite easy, most challenging work is to peel and dice the sweet potatoes, because they're hard and we're not that strong (we should go to the gym ;D). 
This time we served burgers cold with avocado sauce and a cottage cheese, as a quick lunch. But they will taste great warm with a simple arugula and tomatoes salad, drizzled with olive oil and lemon juice.

Ingredients

  • 2 medium sweet potatoes, pilled and cubed
  • 1 cup red lentils
  • 2 cups water
  • 1 cup rolled oats
  • 2 garlic cloves, minced
  • 1 lemon, juice
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1/4 tsp chili powder
  • 1 cup kale
  • 1/2 cup pumpkin seeds
Avocado Sauce:
  • 1 avocado
  • 1/2 cup water
  • 1 lemon, juice
  • 1 garlic clove, minced
  • salt, pepper, to taste

Instructions
  1. Preheat the oven to 200°C (400F). Put sweet potatoes on a baking sheet. Bake for about 40 minutes, untill soft.
  2. In a medium pan add red lentils and 2 cups water. Bring to boil, then simmer for 20-25 minutes. Drain off excess water and set aside.
  3. To the food processor add sweet potatoes, lentils, 1/2 cup rolled oats, garlic, lemon juice, olive oil and spices. Blend until smooth.
  4. Transfer to a large bowl, add remaining rolled oats, kale and pumpkin seeds. Gently combine the ingredients.
  5. Form the mixture into small burgers. Put on a baking sheet. Bake for 25-30 minutes in 200°C (400F).
  6. For the Avocado Sauce: Blend all ingedients untill smooth and creamy.
  7. Serve warm or cold with avocado sauce and rucola.
