Quinoa Salad

Hey you! Sorry for the lack of posts lately, but we've been flooded with exams and other work. Hopefully this recipe will make up for it! You know when you want to just make a quick and easy dinner? Especially when it's the last week before Christmas no one has much time for usual stuff that's why it's good to save some time making this delicious dinner. Well, you hit the jackpot tuning in for today's post.


You can make it as a lunchbox, evening meal or just make it without chicken to just add as a side dish. The oil and lime in quinoa gives it more taste to it. Of course we're using a lot of veggies and depending on seasons you can change them ex. now you could use sweet potatoes or add some more fresh herbs.

Ingredients

Salad
  • 1 cup quinoa
  • 1 tbsp coconut oil
  • zest and juice of one lime
  • 2 avocadoes, sliced (1/2 for serving)
  • 200 g cherry tomatoes, halved
  • 1 red onion, sliced
  • two chicken breasts, diced
  • salt and pepper
Chicken marinate
  • 1 tbsp olive oil
  • 1 tbsp tomato concentrate
  • 1 tbsp cider vinegar
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp garlic powder
  • pinch of oregano
  • pinch of salt


    Instructions
    1. On a stove boil 2 cups of water, cook quinoa for 15 minutes under the lid. During that time you can cut and marinate the chicken with spices, best overnight, but you can just leave it for 10 minutes. Fry using large skillet until the chicken is brown and crispy.
    2. Drain the quinoa, mix in with coconut oil, zest and juice of a lime. Leave to combine for few minutes.
    3. Cut all of the veggies and start arranging everything together. 

    See? It's that easy, super healthy and quick. You can of course cut off the chicken if you are vegan/vegetarian. Please enjoy and hopefully see you sooner than later.
