Recipe type: lunch, dinner, supper
Salad
- 1 cup quinoa
- 1 tbsp coconut oil
- zest and juice of one lime
- 2 avocadoes, sliced (1/2 for serving)
- 200 g cherry tomatoes, halved
- 1 red onion, sliced
- two chicken breasts, diced
- salt and pepper
Chicken marinate
- 1 tbsp olive oil
- 1 tbsp tomato concentrate
- 1 tbsp cider vinegar
- 1 tsp smoked paprika
- 1 tsp cumin
- 1 tsp garlic powder
- pinch of oregano
- pinch of salt
Instructions
- On a stove boil 2 cups of water, cook quinoa for 15 minutes under the lid. During that time you can cut and marinate the chicken with spices, best overnight, but you can just leave it for 10 minutes. Fry using large skillet until the chicken is brown and crispy.
- Drain the quinoa, mix in with coconut oil, zest and juice of a lime. Leave to combine for few minutes.
- Cut all of the veggies and start arranging everything together.
See? It's that easy, super healthy and quick. You can of course cut off the chicken if you are vegan/vegetarian. Please enjoy and hopefully see you sooner than later.
Love,
Karo & Domi x
