Walnut 'meat' taco bowl

This is our next vegetarian recipe. But for the first time vegetarian meat we ever cooked. We weren't really sure if it will be good, but yessss - this walnut 'meat' is amazing! You should try it by at home and put this recipe to your vegetarian favorites! Also your meat-lover friends and family will enjoy this taco bowl. Then it's also simple and quick to make.

        

The new thing here is the walnut "meat" - it's made with cauliflower, spices and lime juice. It's nutritious and very yummy. And everyone can make it, it's easy for begginers in the kitchen. You just place all of the ingredients in the food procesor, mix and then bake for 30 minutes. During this time you can make toppings for taco bowls. This walnut base can also be used in a more traditional way, ex. a tortilla, it would be so good!

        

The taste is original, I can't compare it to anything. It doesn't taste like meat and you only lightly feel the cauliflower and walnuts. But it's really hot, spicy and salty! The consistency and appearance are comparable to meat.


We've made three toppings this time, but you can adjust it to your taste, use different toppings every time. That's why those kind of recipes and dishes are the best, because they have many versions you can come up with.


Going back to our version - we had two kinds of salsa and guacamole, everything served in bowls with rice. The key flavors were corriander, parsley and lime, they're refreshing and very intense.
First salsa we made with pineapple and corn, second with tomatoes. To both of them we added chopped red onion, lime juice and herbs - corriander and parsley. For the guacamole you'll need some avocados, but we've seen versions with edamame or green peas! We'll try it for you next time and share with you if it's better :D.


So the main idea today - don't be afraid of trying new things and use different options every time, do what you like in the kitchen by your taste, you don't have to stick to the rules ;).

Ingredients & instructions

You’ll need:
  • Walnut & cauliflower „meat”
  • Tomato salsa
  • Pineapple & corn salsa
  • Guacamole
  • Cooked rice
Walnut „meat”
• 1 cauliflower
2 cups walnuts
2 chili peppers (or 1 tsp chili powder)
1 Tbsp chili powder
1 tsp cumin
1 tsp salt
2 Tbsp lime juice
½ tsp garlic powder


1.       Preheat the oven to 180°C (350 F).
2.       Put all of the ingrediends in a food procesor and blend.
3.       Place grounded „meat” on a blaszka and bake for 30 minutes.

* While the meat is baking prepare salsa and guacamole.

Tomato salsa
• 3 fresh tomatoes
1 red onion
½ lime, juice and zest
Fresh corriander and parsley



4.       Dice tomatoes and red onion.
5.       Chop herbs.
6.       Mix in a medium bowl.

Pineapple & corn salsa
1 cup pineapple
1 cup corn
½ lime, juice and zest
Fresh corriander and parsley



7.       Dice pineapple. Chop herbs.
8.       Mix pineapple, corn, lime and herbs in a medium bowl.

Guacamole
2 avocados
1 lime, juice and zest
1 tsp honey
½ red onion, chopped
Corriander, parsley, chopped



9.       Mash avocados with a fork, add lime juice, zest and honey, mix.
10.   Add onion and herbs and mix.
