Carrot salad with tomato & harissa sauce

Hey! It's a wonderful day today! We made a carrot salad and wow it's sooo good! Psst... I have to confess I hate raw carrot :( bleh... But well, why not to try new things?! And we made this salad - it's amazing! I love it so much, maybe because of the sauce, it's really spicy!


Carrots in this salad looks like pasta, I love the colours of orange carrots with red tomato sauce, topped with white feta cheese. We used simple peeler to make carrot pasta, but it would look also nice if you spiralize them. The salad is really crispy, but feta gives some softness and also a pause from the hot sauce.


The sauce is made from tomato concentrate, it gives really intense taste. We added harissa paste, it's hot and spicy, so remember not to add too much of it. Try even to add less as in our recipe and taste if it's good for you. The sauce from this recipe was too hot for Domi :P so we added more tomato paste to ease the taste of harissa.


This carrot salad would be great as a side dish or an appetizer. We wanted it for lunch, but we were hungry again soon. Oh, and remember to add crumbled feta and some herbs on top of the salad! We chose corriander this time, but mint and parsley will fit great!

Ingredients

1,5 kg carrots
2 Tbsp oil
25 g harissa paste
75 g tomato paste
2 cloves garlic, minced
1 lemon, juice and zest
• 2 tsp sugar
salt to taste
200 g feta cheese, crumbled
fresh corriander


 

    Instructions
    1. Make carrot pasta with a peeler or spiralizer.
    2. Make the sauce - in a small pan mix all of the ingredients. Simmer and stir, the sauce will get smooth.
    3. In a bowl combine carrot pasta with tomato & harissa sauce, divide in 4 portions.
    4. Top with crumbled feta and corriander.
