Hi guys! We're back with our blog and yummy posts! We're two weeks after our final exams and we finally can enjoy summer holidays. Last 2 months were really tough for us, there was a lot of studying and eating junk food :/. But now we're back on track with our healthy lifestyle - with delicious, fit and nutritious food, including some fitness as well. Hope you'll join us with it!
Finally when we got free time we had to make a dessert to celebrate holidays and summer fruit! It's a light tart - amazing for the hot summer days. And this is the last time for sweet and flavourful strawberries this year so be quick and buy some for this pie!
The Strawberry & Vanilla Tart is our favorite, really. In the crust there's an orange and lemon zest which give freshness to it. And the cream is flavored with real vanilla beans and it's 100% natural. There are no artificial products, you'll make it from the beginning by yourself. I think it gives more satisfaction when you do it from zero, from simple products and then you'll enjoy delicious cake. Also you can save some vanilla sticks and make your own vanilla extract and use it for other desserts!
We used strawberries in this recipe, because they give more natural sweetness and also look beautiful with its' red color.

Shortcake crust
• 175 g
butter
• 3 egg
yolks
• 1 tsp
honey
• 60 g icing
sugar
• salt, pinch
• zest from
1 orange and 1 lemon
• 250 g
flour

1. Preheat
the oven to 180°C (350 F). Spread some butter to the tart pan.
2. In a medium bowl mix all of the ingredients except flour.
3. Next add flour and mix.
4. Place the dough to the pan and even out with fingers.
Make pinholes with fork in the bottom.
5. Bake for 18 miutes, take out and leave to cool.

Vanilla bean cream
• 375 ml whole
milk
• 125 ml
heavy cream
• 125 g
sugar
• 6 egg
yolks
• 35 g flour
• 1 vanilla
stick

6. In
a pan boil milk and heavy cream. In a medium bowl mix egg yolks with sugar,
then add flour, vanilla beans and mix.
7. To
the bowl with egg yolks add hot milk with heavy cream. You should stir the
mixture the whole time.
8. Transfer
it back to the pan and bring to boil, then take off the heat. Remamber to
stir the cream all the time, it’ll thicken.
9. Transfer
to the bowl and let it cool.

10. Put
the vanilla cream on the crust.
11. Place
strawberries on top – whole, halved or diced.
