Hi guys! You don't have that much time to make dinner today? That's why we're here to give you simple, delicious and most important quick recipe to make! 



Who doesn't like good old stir fry? It's easy to make you put everything in one pot and it doesn't require a lot of cooking techniques from you. Sort of a comfort food, but if you put extra effort you will get a healthy meal with loads of veggies.


It takes just 25 minutes and you can cook the rice while you're frying carrots and broccoli. Perfect if you know someone who doesn't like vegetables, but would want to try and eat more of them because the peanut butter added in the sauce makes it sweet and much tastier than plain veg.

Ingredients

  • 200 g rice, cooked
  • 1 tofu, diced
  • 2 carrots, cut into cones
  • 1 broccoli, cut  off florets
  • 2 tsp ground ginger
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 2 tbsp peanut butter
  • 1 tbsp oil
  • 1 packet microgreens

Instructions
  1. In a large pot heat one tsp olive oil. Then add in small broccoli florets and carrot cones and fry for 5 minutes. 
  2. Add in the ground ginger and minced garlic cloves stir into the veggies. To add more taste to it add soy sauce and peanut butter and mix to incorporate.
  3. When the vegetables are more tender add cooked rice and mix everything together. 
  4. You can add tofu fresh from the packaging or fry it for 5 - 10 minutes in your favourite spices (ex. sweet paprika, salt, pepper, chili powder, etc.).
  5. Arrange your plate, add some microgreens and sprinkle with sesame seeds or black seed.


Enjoy! Wasn't that quick? Also it looks amazing with all veggies cut into small pieces and of course the most important it's quite filling so you won't have to grab a chocolate after ;)
