Lemon Pie

Hi guys! It's finally 2017 and with everyone's resolutions about working out, eating healthy that probably less fraction of us will complete we decided to make a dessert that's not that heavy and bad for you. Lemon pie, well not actually it's more of a cake without the standard pie whipped cream. 


Just like with every recipe it's perfect for everyone, if you don't like too sweet cakes you can always decrease the amount of sugar or use one more lemon. According to our measurements you'll get a pretty sweet dessert, but because we're not using lemon juice but lemon slices, made into puree, you can taste small bits of flesh.

Ingredients


Cake base
  • 250 g plain flour
  • 130 g sugar
  • 1/2 tsp salt
  • 230 g butter, diced
Lemon filling
  • 2 lemons
  • 450 g sugar
  • 230 g butter, room temperature
  • 8 eggs
  • 4 tbsp potato starch
  • 1/2 tsp salt




Instructions
  1. Preheat the oven to 175°C (350F). Line the baking pan 25 x 36 cm (10 x 14 inches) with a baking sheet.
  2. In a bowl mix together dry ingredients for the cake base, add in butter. Using your hands try to make a crumble mixing everything together.
  3. Fill in the baking pan with the cake crumble and press it out on the pan. With a fork make holes on the base to decrease the possibility of breaking during baking.
  4. Bake for 20 minutes.
  5. Start with washing the lemons in hot water, cut in half and try to neatly peel the skin. Then cut the lemon into slices.
  6. Using an electric hand mixer make a puree out of lemon slices and sugar. Then start adding the butter until combined makes a smooth mixture. Add and mix together with the rest of the ingredients.
  7. Pour on top of the cake base and bake for 35 minutes, until the top starts to get light brown. Let it cool down.
  8. You can stop at that point or try to make it good looking by sprinkling with icing sugar and adding lemon slices on the top.


How easy was that? You can now enjoy the best lemon creation, but be sure to cut yourself a piece before everything is gone ;)
