Healthy millet pudding

When it's still holidays and we have some time in the morning, we try to have  healthy breakfast. Today we prepared a millet pudding. Who doesn't love pudding?! But this is a better version with valuable nutrition. Millet provides protein, fiber, vitamin B and magnesium. It's also gluten-free, so you can bring it in your diet if you've got gluten intolerance.



We made two versions of this pudding - one with banana and second with cocoa fiber. To both of them we added homemade raspberry syrup for some natural sweetness. You can also garnish your bowl with favorite fresh fruit.

Ingredients

  • 1 bag (100 g) millet 
  • 2 cups milk (you can use cow or plant milk) 
  • 1 banana
  • 1 tsp honey 
  • Optional: raspberry syrup, cocoa fiber, fresh fruits

Instructions

  1. Rinse your grains in hot water. Put millet and one cup of milk in a small pot. Boil on a small heat for about 15 minutes, till the grains absorbe whole milk. Be careful not to burn it. 
  2. In medium sized bowl combine cooked millet, rest of milk, banana, honey and fiber (if used). Blend until smooth, it will takes few minutes.
  3. Devide in two small bowls. Top with raspberry syrup and garnish with fresh fruits. You can eat warm or cold.
