Chicken salad with cilantro & avocado sauce

Hi again! We're going through our second week of school / work. It wasn't easy to go back to all of those duties. And what's more to find some time in everyday rutine to cook. We have our shifts morning or afternoon, so we started to bring our boxes with lunch to work. And what's more we want to cook clean and healthy. Today it's a chicken salad with fresh veggies served with green sauce made with cilantro and avocado.



We're trying to eat clean and healthy and what's more for me, with lower calorie intake. Also our friends asked us for some easy and quick recipes. So here we have this salad! After first week at school/work we're successful with our plan healthy eating. We started to plan our meals for the whole week - on weekends. Also we prepare grocery lists earlier to have everything planned. Last year we didn't have this strict plan and we came home exausted and hungry, we ate anything on our way or just ordered a pizza.  And if you have these things planned - it's easier to succeed it.

Today we have for you easy and delicious salad. It's really easy to make and also quick. You just have to chop all of the veggies and fry the chicken. The servings are very big, so you'll be full for the good couple of hours. It looks nice, with lots of colors. As a base we had romaine lettuce, which is very crispy and it's fresh for a long time, even in a lunch box.





The sauce is a lovely, new discovery for us. We loved it from the first time. It's mild green, it looks delicious. And the texture is very nice, it's creamy and rather thick. We made it on the base of greek yogurt and avocado, that's why the sauce has the perfect consistancy. Other ingredients for the sauce are fresh cilantro and lime juice, which gives lots of freshness and taste to this sauce and salad.

The sauce is a begginer level and it takes as short as 3 minutes to make. You have to blend all of the ingredients and the perfect sauce is ready! I love it so much. It'll be good as a dip with cut veggies like cucumbers and bell peppers - as a quick idea for a party. Or as a dip for some chips, fries and nachos, something instead of a classic guacamole. And very important with the sauce - if you want to take it as a lunchbox, take the sauce separately to save the freshness of a salad for longer.

2. HONEY CHICKEN - our fav for salads
3. CORN - it's nice crispy and sweet.

The salad is a god choice for a quick and healthy lunch. And the sauce makes taste totally different than usual boring salad, something new than a simple salad thanks to the sauce. You should try it and you'll know.

Ingredients & instructions

Chicken salad
1 can sweet corn, drained
2 romaine lettuce
500 g chicken breasts
2 Tbsp oil
2 Tbsp honey
1 tsp powdered sweet paprika and chili, each
250 g cherry tomatoes
2 cucumbers
2 yellow bell peppers



1.       Wash and cut chicken breasts. Mix with sweet pepper, chili, honey and oil in a bowl. Transfer to a pan and fry for about 5 minutes.
2.       Wash your veggies. Slice cucumber, half tomatoes and chop bell peppers. Rip romaine lettuce using hands.



Cilantro and avocado sauce
1 avocado
½ cup greek yogurt
60 ml water
1 bunch cilantro
2 cloves garlic
1 lime, juice
salt




3.       Put all of the sauce ingredients in a blender. Blend until smooth. If it’s too thick, add more water.
4.       Serve the salad on a plates or as a lunchbox. Pour the sauce on a top of the salad.
