Green Goddess Buddha Bowl

This is a goddess! For real. That's the most BEAUTIFUL and DELICIOUS salad we've made recently. It looks sooo good, I could have it everyday for my lunch. The Green Goddess Buddha Bowl is so bright and the green color is very intensive, you see it and you can't refuse to try this Green Bowl.


The inspiration came from Instagram and green buddha bowls there. So we tried it ourselves, why not, when they're so beautiful? And it was how we made it. I just scrolled my instagram pages and there is a lot of veggie bowls, those I love. But eye catching are the green ones - it's a health purity - 100%. You just look and know that. I decided it would be perfect choice for our healthy lifestyle diet now. We just had to prepare our version of a green bowl! And it was very easy. What you need here is your imagination and some veggies and fruits.

We post here our version for the Green Goddess Buddha Bowl. That's how we have it and we like it a lot. We've used veggies of our choice - broccoli, cucumber, zucchini and arugula. Funny thing is that you can make them look different. We made something like noodles from cucumber, it was made with a simple vegetable peeler and then we rolled it as a cute pinwheels. For the zucchini we decided to dice it this time. But maybe even better it would be spiralized. But it took less time to dice the zucchini and it tasted also good!



And yesss, sorry but we love arugula so much! We almost always have it in our salad bowls. But we know that its taste is really intensive and not everyone love it as much as we do. Then you can try with other kinds of salads, choose your favorite one.

Veggies weren't enough for us! We had avocados, kiwis and limes also. They make the salad more exotic, maybe... They all look so good, even now, while writing, I stare at the photos and my mouth is watering :P Kiwis and limes get some sourness and a boost of freshness to the salad, also look beautiful with the veggies in this bowl.

Did you see this avocado on the photo? It's a new style of avocado. We saw it on insta also and w love it! It's a lego avo or pixelated avo - well even the names are adorable. It's easy to make it also, easier than the avo rose I think.



Our salad was almost raw, we only cooked broccoli, about 3-5 minutes. Zucchini was raw, but grilled could be even better. We should try it next time, can't wait for it! To add some calories and protein for the dish so we won't be hungry in a minute, we served the salad with cooked bulgur.

And what's more we served it with a HUMMUS & yogurt sauce. It was a natural yogurt this time, but you can use vegan yogurt or mayo as well. Also only hummus will be good, we love it a lot. We chose natural chickpea hummus, but flavored one will be good as well.

Ingredients & instructions


1 broccoli
2 cucumbers
300 g arugula
2 ripe avocados
4 kiwis
3 zucchini
2 limes
200 g bulgur


1.       In two pans boil some water. Add broccoli florets to one and bulgur to second pan. Boil broccoli for about 3-5 minutes and bulgur for 15 minutes.
2.       Wash fruits and veggies.
3.       Make some noodles from cucumber using a peeler.
4.       Dice avocados or make a pixelated avocado as we did. Also dice the zucchinis or spiralize them.
5.       Slice limes and kiwis.
6.       Put everything to your bowl. Arugula and bulgur on the bottom and fruits and veggies on top.






400 g yogurt, natural or vegan
200 g hummus
pepper, to taste


7.       In a small bowl mix yogurt and hummus. Add some pepper to taste.
8.       Put the sauce on the salad.
