Honey marinated salmon with broccoli salad

Hi, how are you today? We have been making this kind of meal quite a few times separately the salmon and salad, but never mixing them and serving together. Although quite honestly this is delicious how they complement each other and you just keep on wanting to eat more! 

The recipe contains amazing juicy salmon, coated with honey and mustard glaze, it is at the same time sweet and a little bit bitter. But in our opinion the plate is overtaken by one of our favourite salads, made with broccoli. It's an amazing green and full of vitamin C vegetable, a source of high amount of calcium and magnesium. If you don't like the taste of it on it's own you may like it in this combination with light creamy sauce and amazing toppings - toasted flaked almonds and cranberries that give sweet and crunchy addition. 


Actually by cooking broccoli in water they lose some of their nutrients you can add them raw, but definitely washed before hand, or they are also great steamed or stir fried. Doesn't that sound amazing? Well, we hope you will enjoy making and of course eating this dish, so let's get onto the recipe.

Ingredients

  • 4 salmon fillets
  • 1 tbsp chilli
  • 1 tbsp sweet paprika
  • 2 tsp brown sugar
  • 1/2 tsp salt
  • 2 tbsp honey
  • 2 tsp dijon mustard
  • two broccoli heads, chopped into florets
  • 270 g feta cheese, crumbled
  • 1/2 red onion, diced
  • 50 g flaked almond 
  • 45 g cranberries, chopped
  • 3 tbsp mayonnaise
  • 1/2 cup buttermilk
  • 2 tbsp vinegar
  • 1 tsp sugar




    Instructions
    1. Preheat the oven to 200°C (390F)
    2. Wash the fillets and dry with paper towel and put in a casserole dish.
    3. Mix the chilli, paprika, brown sugar and salt in a bowl and sprinkle over the fish. Then drizzle with honey and cover with mustard. Bake for 25 - 30 minutes.
    4. Cut the broccoli into florets and cook for 8 - 10 minutes, or until tender. You can start making the salad with toasting the flaked almonds to make them light brown, dice the onion and chop cranberries, feta cheese can be crumbled with a fork or you can cut it into small dices.
    5. The salad sauce is made by mixing all of its ingredients. Mix it with cooked broccoli and other prepared before toppings.
    6. You can also make the salad a day before and keep it in the fridge or make it with different kind of fish, meat or veggies.


    There it is! Nutritious and healthy as always, well except for our favourite desserts.
