Orange and pumpkin buns

Hey guys! It's finally autumn, what means sweaters, candles, colourful leaves and most importantly perfect recipes to share with you! And what else screams to you more autumn than oranges, pumpkins, spices, apples?
Honestly autumn is my favourite season alongside spring, although flowering plants, trees and first rays of sunshine make me very happy, I enjoy more falling leaves, cosing up with a blanket and hot chocolate! It's the perfect time to spend time on making unusual and flavourful recipes - carrot and spices cupcakes, cakes, or even spicy squash soups or other entrees.



This recipe is one of our favourites because it's just sweet deliciousness in a small bun. It takes a little bit more time than quick cupcakes or usual apple pie but when you try it you'll see it was worth it. In the recipe the most important ingredient is pumpkin puree. I actually made one myself from scratch, so you can be expecting a post including that soon!

The taste of those warm aromatic buns just makes up for all that time spend in the kitchen. Because we love baking and cooking, that makes it more enjoyable and we can spend more time together. The recipe can also be alternated with different fillings, fruits ex. cranberries or apples.

Ingredients

Pumpkin buns
  • 3 cups plain flour
  • 10 g dry or 25 g fresh yeast
  • 3/4 cup milk
  • 65 g brown sugar
  • 30 g butter, melted and cooled
  • 1 egg
  • 280 g pumpkin puree
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 tbsp orange zest

Orange jam (to fill the buns) - you can buy or make one

Orange glaze
  • 1 cup icing sugar
  • 3 tbsp orange zest
  • 3-5 tbsp boiling water

Instructions
  1. First prepare the yeast solution: in a bowl put 25 grams fresh yeast, add 1 tablespoon sugar, 1/4 cup lukewarm milk, stir to dissolve the yeast. Add 3 tablespoons flour and stir to avoid lumps. Cover with the cloth and leave in warm place for 30 minutes.
  2. Mix the solution with rest of the flour and other ingredients, start mixing and last but not least add the melted butter.
  3. Knead the dough until combined, it should be soft and elastic. It may take some time and you have to be patient. Form a ball and put into a bowl sprinkled with flour, cover with clean cloth and leave in a warm place so it doubles the volume. (about 1,5 hour)
  4. Prepare big baking pan and cover with baking sheet.
  5. When the dough is ready knead it for 2 - 3 minutes. 
  6. Divide in 13 buns, and form all into small balls (rolls), slightly flatten them on your hand and put your orange jam inside. Try not to overfill the buns, because the jam will pour out and they'll be less moist. Glue together the corners and make sure the filling is covered tightly.
  7. Place the buns on the sheet, covering with cloth leave them to rise again for 20 - 30 minutes.
  8. Bake for 20 - 22 minutes in 180 C
  9. When the buns are in the oven you can slowly prepare the glaze. Mix all of the ingredients in a small size bowl, but you should add the last tablespoon of hot water just before glazing the buns.
  10. After buns are ready, take them out of the oven and let cool a little bit. 
  11. On still warm (but not hot!) buns pour over the orange glaze.

And there it is! The most amazing recipe to use on those cold, dark evenings. They will just melt in your mouth and you won't even notice and they're gone! We actually devoured them before they were all ready to serve.
