Cheese and Kale Gnocchi with Tomato Wine Sauce

Hey there! Today we decided to let loose a little and eat something less healthy but still it's not bad because it's homemade. Especially lately we've been putting more attention to what we eat, although it's really hard to incorporate healthy eating everyday and being out in uni most of the day. Luckily this week I had a few days free so we got to make most of it and cook most delicious meals!


Gnocchi is probably one of the best kind of pasta. The recipe is really not difficult and it won't take you long time to make. Also when making ravioli or other pasta you have to really make sure everything is added in correct order and the dough is well combined but in this one you don't have to worry it's that easy! It's one of those recipes that you can use when you have last minute guests coming.

Ingredients

Gnocchi
  • 400 g ricotta
  • 1 cup mozzarella, grated
  • 80 g grana padano, grated
  • 200 g kale, shredded
  • 100 g plain flour, sifted
  • Salt and pepper 
Spicy tomato sauce
  • 3 cans of tomatoes, drained
  • 1/4 cup red wine
  • 2 cloves garlic
  • 2 tsp chilli powder
  • 1 tbsp olive oil 
  • Grated grana padano to sprinkle


Instructions
  1. Preheat oven to 220°C.
  2. To make gnocchi first you have to wash kale and remove the stems, then shred into small pieces. Put it in the bowl and cover with boiling water. Leave for 5-8 minutes.
  3. Meanwhile mix in ricotta, mozzarella, grana padano, sift the flour in. Before adding kale remember to drain and squeeze out excess water. Add to the rest and sprinkle with salt and pepper, mix to combine.
  4. Divide the dough into same sized 4 balls, roll out each one on a well-floured surface. Cut each log into pieces about 3 cm and set aside. 


  5. In a large casserole put all of the tomato sauce ingredients. Cover with foil and bake for 5-10 minutes.
  6. Add the gnocchi to the casserole and bake for another 15 minutes. When ready serve with grated cheese on top.
